Zebra Ogura Cake Recipe- Zebra Cake



Ingredients : 

(for round pan 20cm)

  • 10g cocoa powder + 30ml hot water
  • 5 egg yolks + 1 egg
  • 60g oil
  • Milk- 80ml 
  • All-purpose flour- 75g 
  • Egg whites- 5
  • Cream of tartar- ¼ tsp 
  • Sugar- 75g

1. Whisk 5 egg yolks + 1 egg until smooth and pale. Add oil, milk, mix well. Sift the flour and whisk until smooth

2. Add cocoa and hot water, mix well

3. Whisk 5 egg whites until foamy then add tartar and sugar until stiff peak stage

4. Fold whites into yolk-flour, mix until incorporated

5. Divide (4) into 2 parts. Add (2) into one part

6. Pour 4 tbsp of plain batter into the center of the pan, then add 4 tbsp of cocoa batter on top. Repeat until all batter has been used.

7. Use a large baking pan for a hot water bath and bake at 150°C preheat in 50 minutes

8. Once cooked, leave to cool 5 minutes, then upside down and take the cake out.
