Ingredients Of Pies: 

  • Potatoes- 3 medium
  • Cooking oil- 50ml
  • Grated onion- 150ml
  • 2-3 curry leaves
  • Crushed cumin seeds- 5ml
  • 1 green chili –finely chopped
  • freshly grated root ginger- 5ml
  • Sesame seeds- 15ml
  • turmeric powder- 5ml
  • salt- 5ml
  • freshly squeezed lemon juice- 10ml
  • finely chopped spring onions- 75ml
  • finely chopped coriander leaves- 75ml

First of all, Peel and chop potatoes into small cubes.

After this… Heat oil in a heavy-based frying pan, add the grated onions and stir fry for a few minutes

Add curry leaves, cumin seeds, green chili, ginger and allow the mixture to roast for a minute before adding the sesame seeds

Now add the potatoes and turmeric and lower heat, cover the pan and allow to cook till the potatoes are soft and tender

Remove lid, season with salt and lemon juice and allow to cook uncovered for a few minutes

Once the mixture has cooled thoroughly, mix in the coriander and spring onions

This mixture can be used as a filling for samosas, pies or for a toasted sandwich
