Samagri/ Ingredients :
- Maida- 200 gram or 2 cup (White Flour- 200 gm Or two small bowl)
- Pani- 2 bowl (Water- 2 bowl)
- Yeast- 1 / 2 spoon
- Melted butter (oil)- for fry
Chashni banane ke liye ( For Sugar Syrup)
- Chini- 400 gm (Sugar- 400 gm)
- Pani- 200 gram (Water-200 gram)
- Milk- 1 tsp
- Kesar- 1 chutki ( Saffron- About 1/5 tsp)

Sabse pahle Yeast ke dano ko 1/2 cup gungune pani me 10-15 minute ke liye bhigo kar rakh dein, Ab Ek bowl me maida aur yeast ka ghol daalein. Maida me guthliya khtm hone tak pani daal kar pakode jaisa ghol bana lein. Iss baat ka khyaal rakhe ki ghol jayada mota ya patla na ho. Ghol ko kareeb 12 ghante ke liye dhak kar rakhe. 12 ghante me ismein khameer uth jayegi. aur aap ki jalebi ke liye ghool taiyaar ho jayegi.
Jalebi banane se pahle uski chashini taiyaar karege……
Ek baratan me chini aur pani mila kar usein achche se garam kar lein. Chashini ko tab tak pakati rahe jab tak chini ghul na jaye. Ab ismein thora sa kesar milade. aur ise dhimi aanch par 2-3 minute tak aur pakaye. 1 tak ki chashi bana kar taiyaar kar lein. Ab ise side me rakh dein.

Ab karahi me ghee dhaalein. jalebi banane ke liye ek khaas trah ka kapra milta hai aap chahe to dudh ke pouch ka bhi istmaal kar sakti hai. khamer uthe maide ko achche se mix kar lein. Ab mixture ko pouch yaa kapre me daal kar ise oil ke uper dhire dhire chalati rahe Ab inhe palat palat kar achche se paka lein. ab inhe bahar nikaal kar chashni walein bowl me dubo de aur 2 minute tak dubo kar rakhe. Aur phhir bahar nikaal kar plate me saza kar serve kare.

Soak the granules of yeast in warm water for 10 to 12 minutes. Mix yeast in the water. Put yeast liquid and flour in a bowl. Add more water and mix and stir it in the flour. The resulting liquid mixture should not be too thick or too thin. Leave this liquid mixture covered for 12 hours. Within 12 hours this liquid will be fermented and will be ready for making the Jalebi (a sweet)… For the preparation of jalebi, first of all prepare the sweet syrup for it.

Make a solution of sugar and water and heat it in a utensil. Pour milk after the liquid starts boiling. Remove wastage from the solution by a frying spoon. This syrup becomes transparent. Now sprinkle Saffron leaves on this syrup. Prepare the sweet syrup with thickness or stickiness. It takes 8 to 10 minutes to prepare the syrup.
And now time to make beautiful jalebi (a sweet) in round shape…..
Stir the fermented flour adequately. For making jalebi, the frying pan is different. It should be bigger and with lesser height.First of all, Heat oil in the frying pan. For preparation of the jalebi a special cloth or box is available in the market.

Note: We can also use a normal milk’s plastic bag.
Put the fermented flour mixture in the box or bag and put it’s stream, in circular motion, in the frying pan. After they turn pinkish, take out the fried jalebis and submerge them in the sweet syrup. After 5 minutes, take the jalebis out, from the syrup and put them in a plate.
And now your Jalebi is ready, enjoy the hot & Sweet Jalebi…. 🙂
