Samagri-Bharva ke liye/ingredients for samosa filling:

  • Keema- 250 gram ( Minced meat-250 gram)
  • Payaz- 1 (Onion- 1)
  • Hari mirch- 3 (Green chili-3)
  • Adrak- 1/2 inch kati huyi (Ginger-1/2 inch piece)
  • Lahsun- 10 kali (Garlic-10 cloves)
  • Badi Ilaychi- 1 (Cardamom brown-1)
  • choti ilaychi- 2 (Cardamom green-2)
  • Kaali mirch- 1/2 tsp (Black paper-1/2 tsp)
  • Laong- 2 (Cloves-2)
  • Jeera- 1/2 tsp (Cumin seeds-1/2 tsp)
  • Laal mirch powder- 1 tsp (Red chili powder-1 tsp)
  • Haldi powder- 1/4 tsp (Turmeric powder-1/4 tsp)
  • Dhaniya powder- 1/2 tsp (Coriander powder- 1/2 tsp)
  • Salt- As you needed

Covering ke liye/Ingriedents For cover:

  • Ajwayin- 1/4 tsp (Carom seeds-1/4 tsp)
  • Aata- 2 cup (All purpose flour- 2 cup)
  • Salt- as you want
  • Oil- frying

Vidhi:

Meat ko achche se clean karke pees lein. Aur phhir cooker me ek glass pani daal kar usein pakaye ise achche se pakane ke liye gas par 1 siti aane tak 5 minute tak achchi trah paka lein phhir kuch time dhimi aanch par pakayein… Phhir siti khulne par extra water baha dein aur kimi ko ek side me rakhe. Ab ise mixture me achchi trah se pees lein. Ab cooker me thora sa oil garam kare aur usmein pyaj aur hari mirch add kare aur usein tab tak achchi trah se pakaye jab tak, ki payaj sunhari na ho jaye… Ab isme meat daal kar dhimi anch par 2-3 minute ke liye paka lein.

Ab iske baad Adrak, lahsun, jeera, kaali mirch, laong, aur chhoti ilaychi ko achche se mixture me pees lein… Cooker me paste daalein aur laal mirch, haldi powder, dhaniya powder, 1 cup pani aur namak milayein. phhir hari matar daal kar ise achchi trah se mila dein. Ab filling bilkul taiyaar hai..

Ek bowl me aataa, ajwaayin, oil aur namak lein. ismein thora pani milakar ek kadak aataa guth lein. Aate se ek chota tukra lein ise achche se bel kar eske do hisse kar dein. Ab samosa coan banaye aur ismein filing ke chmmach daal kar achche se bnd kar lein. isi trah sabhi samoso ko bana lein. karahi me oil garam kar lein aur ab ismein samosa daal kar ise deep fry kare aur sunhara hone par nikal lein aap ka keema samosa taiyar hai. 

Method:

Wash the minced meat properly. Take meat into pressure cooker along with 1 glass of water and cook for about 1 whistle on high heat and 5 minutes on medium flame. Then drain the excess water using strainer . Take small amount of cooked meat in a blender and blend it coarsely. Blend all the cooked meat and take it out in a plate. Heat the oil into pressure cooker and fry onion and green chilli till onions are light golden…….

Blend ginger, garlic, cumin seeds, black pepper, cloves, cardamom brown & green to make paste. Add ground paste into cooker and add red chili powder, turmeric powder, coriander powder and, 1 cup water and salt. Cook the spices on slow flame for about 10 Minutes. Then add green peas into it and mix it well. Now the filling is ready.

Take flour, carom seeds, oil and salt in big bowl and add small amount of water to make hard dough. Take a ping pong size ball from the dough and roll it in a round circle using rolling pin. Cut it into 2 halves. Make samosa cone. Put 2 teaspoon of filling into cone and seal the third side. Heat the oil into wok or pan and deep fry the samosa on low flame until golden brown in color from both the sides. And now your meat samosa is ready.. Hope you enjoy 🙂
